This is a quick and easy Italian dressing that's also oil free! Sometimes I need something more then just vinegar so this is my go to dressing. I hope you enjoy it
Ingredients:
- 1 cup low-sodium vegetable stock or use my recipe to make your own.
- 1/4 cup red wine vinegar
- 1 tbsp dijon mustard
- 1 1/2 tsp agava
- 1 clove or garlic
- 1 tsp Italian seasoning
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp paprika
- 1 tsp to 1 tbsp xanthan gum
Steps:
- Place all ingredients in a blender blend on high for 10 seconds.
- Add more xanthan gum ass needed add slowly. This is what makes the dressing more thick.
