Spicy Tofu, Rice and Wakame



I am very inspired by Asian cooking. This is a simple week night dinner that all will enjoy! Well as long as you like it spice.

Ingredient

Brown Rice
Japanese Wakame
Miso Paste
Block of Tofu
Hot Pepper past
Water
Agave
Green Onion
Sesame Seeds

Instructions

Cook for rice according to your rice insertions. The the wakame as many dried flakes and you would like add it into a pot of boiling water. Boil for 10 min. Boil some water in your kettle. Take a bowl add in the hot water with miso paste. Lastly add in the wakame. Take the tofu cut it into small rectangles, what ever thinness you want. I like to take a pan and and dry fry the tofu fist till both sides are lightly browned. Then I make the spicy sauce. I take a table spoon of the pepper past, a teaspoon of agave and as much water as you want to make a sauce to cover the tofu. Then add the sauce to the pan with the tofu in it. Bring to a light boil till all the sauce is thick. I then add the rice to a plate with the spicy tofu and a side of miso soup. Top tofu with some sesame seeds and cut up green onions. Vegan Fresh Rolls



This is the perfect lunch or dinner for a hot summers day! These are super easy to make and something you can get everyone to help make just like sushi!

Ingredience

Items for the rolls
Package of rice paper
Package of rice noodles
1 carrot
Basil
1 block of Tofu
1 Cucumber
1 avocado

For the sauce
6 tbsp smooth peanut butter
3 tbsp soy sauce
1 tbsp rice vanager
1/2 tsp sriracha

Instructions

Boil water in a pot for the noodles and cook according to its package. Also boil more water for the rice paper. While that is going on cut up all the ingredient for the rolls into small strips. I like to Julianne the carrots. I do this by cutting them on an angle into small strips like you see in the photos. Then I take some of them on top of each other, then cut again into small match sticks. Next take all the sauce and mix it together. If the sauce is too thick then add in some hot water slowly till it gets to the the right thickness for dipping the rolls in. Next its time to make the rolls. Take a dish that is large enough for the rice paper. Add in some hot water, then add in the paper for just enough for the paper to feel a bit less stiff. Take the paper on a cutting broad. Start by adding in the rice noodles, then the other items so basil tofu, cucumber, carrots. Fold up the sides on the left and right of the rolls. Then roll it up then start this process again. Vegan Tomato "Salmon" Sushi



Being vegan doesn't mean we have to give up on yummy sushi! I am such a fan. And now you can enjoy "salmon" too! This is a simple recipe that I like to make the day before I want to make the sushi, I do this so that the tomato has more time to marinade.

Ingredients
2 Large tomatoes
1 1/2 tbsp soy sauce
1/2 tbsp kelp cut into small strips
1/2 tbsp nori cut into small strips
1/2 tsp minced ginger
1/2 tsp sriracha
1/2 tbsp sesame oil


Instructions
Bring a pot of water to a boil. Add the full tomato, let them boil till the skin starts to peal off of them. While the tomato are boiling add all other ingredient to a container you can seal up. Next add them to a ice bath. Once you can handle the tomato take them out of the water. Put it on a cutting board. Peal off the other skin. Cut the tomato into strips and take out the seeds. All you want to save in the fleshy part. Once you have the cut out piece then add it to the sauce we have made. Cover and leave in the fridge for at least an hour or up to a day. Add it to your favorite sushi rice and enjoy with any other vegetables! Do you like sushi? Do you like making it at home?
