Simple Italian Dressing


This is a quick and easy Italian dressing that's also oil free! Sometimes I need something more then just vinegar so this is my go to dressing. I hope you enjoy it

Ingredients:
  • 1 cup low-sodium vegetable stock or use my recipe to make your own.
  • 1/4 cup red wine vinegar
  • 1 tbsp dijon mustard
  • 1 1/2 tsp agava 
  • 1 clove or garlic
  • 1 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika
  • 1 tsp to 1 tbsp xanthan gum

Steps:


  1. Place all ingredients in a blender blend on high for 10 seconds.
  2. Add more xanthan gum ass needed add slowly. This is what makes the dressing more thick.

Foodie Enamel Pins


I start this process by coming up with the drawing of my CandiWare designs.
Then I sent them in to a company in Niagara falls.
There was a little back and forth about size of the pins also the colours and how much they would cost.
I then finalized my designs and sent them in to be made.
While I was waiting for them, I made a simple but very much so in my company themed CandiWare card backing for the pins.
They just came in the mail and I couldn't wait to take photos of them and also add the backing. 
I am so happy with how they came out.

Vegan Gluten Free Prune Cake


This is a simple recipe for everyone that wants to enjoy something yummy and cake like! This was such a hit with vegans and non vegans. I just know everyone in your family will love it too! BTW you can sub prunes for apple sauce. You need one of these items for its pectin content.

Ingredients:

  • 2 cups rice flour
  • 1/4 cup tapioca starch
  • 1/2 teaspoon xanthan gum
  • 1 cup pitted prunes
  • 1 cup water for the prunes
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup nut milk of your choice
  • 1 tbsp apple cider vinegar
  • 3 tbsp ground flax + 9 tbsp or about 1/2 cups water
  • Low Sugar Strawberry Jam mine is homemade! (optional) 

Steps:

  1. Preheat oven to 325 degrees.
  2. Grease bundt pan and set aside.
  3. In a small pan boil several cups of water. Remove from heat and 1 cup water to prunes. Let soak for 15- 20 minutes or until prunes have softened. Add prunes plus the water into a vitamix or blender. Set aside.
  4. Combine the flax with warm water. Set aside. 
  5. Mix 1 cup nut milk with the apple cider vinegar also set aside.
  6. Combine rice flour, tapioca starch, xanthan gum, sugar, cinnamon, cloves, salt, and baking soda.
  7. In a bowl combine the flax and milk mixtures.
  8. Slowly add flour mixture to wet mixture and stir just until combined.
  9. Stir in prunes.
  10. Optional step add some strawberry jam to the bottom of the bundt pan.
  11. Next spread batter into bundt pan.
  12. Bake for 70-75  minutes. Check cake at one hour and bake additional time if needed or until cake starts to pull slightly away from the pan. This cake is very dense and moist so the toothpick test is hard to do on this one.
  13. Let cake cool in pan for 10 minutes than remove from pan to cool on wire rack.
  14. Also optional add some icing sugar mixed with lemon juice on top.
