Episode 08-Potato Diet for weight loss, Vegan Ice Cream in the UK

Cauliflower BBQ Wings With Ranch Dipping Sauce

Fun finger food for the night! Try this out with some fresh cut backed fries with little to no oil on them. If you want a full meal.


Ingredients:
Wings
2 heads of Cauliflower
1 1\2-2 cups rice flour
1 1\2-2 cups bbq/ buffalo sauce what ever is your favorite 
1/4 teaspoon garlic powder
1/4 teaspoon  salt
1/4 teaspoon  Paprika
1 1/2-2 cups water
*note use the smaller amount of the ingredients if your heads of cauliflowers are small and use the larger amount of the ingredients if the heads are bigger.
Ranch Dip
1 cup Vegan Mayonnaise 
1 tablespoon coconut milk
1/4 teaspoon salt
1 teaspoon onion powder
1/4 teaspoon black paper
1 teaspoon chives
1 teaspoon dill
1 tablespoon apple cider vinegar

For the Wings: Preheat your oven to 450 degrees. Add all the ingredients in a bowl. Water, flour, salt, paprika, garlic, whisk together. Cut the cauliflower into flowerettes. Dip the flowerettes in the flour mixture and place it on a backing sheet (I had a problem with sticking so you may wanna rub the smallest amount of oil on the sheet. Place in the oven for 15-20 min. Once you take them out of the oven and let cool for 5 min dip the cauliflower into your favorite bbq/ buffalo sauce. Bake for an other 5 min. Time to enjoy!

For the Ranch Dipping Sauce: Mix all ingredients with a spoon until well combined and creamy. (Add in 1 cup milk to make this sauce more of a salad dressing) 














Tomato Soup

This soup is  it's soo yummy and creamy/ buttery tasting with out there being either! No oil! So good for you!



Ingredients:
Soup
1 big tomato cut into rough cubes
4 pinches of salt
1 teaspoon dried oregano
teaspoon dried basil 
1 (28-oz) can of fire roasted tomato
3 cups vegetable broth
1 cup canned coconut milk, plus extra for drizzling
1 tablespoon brown sugar
Croutons
2 Cups rye bread cubed

For the soup: In a large Pot, heat tomato cubs over medium- high heat. Add oregano and basil cook for a minute. Add canned tomatoes and veg broth, bring to a boil. Remove from heat, and puree with a blender or immersion blender. Return to heat add in the coconut milk and the brown sugar. Season to taste.

For the croutons: In a large skillet dry saute bread cubes for about 10 min. Season with salt and pepper while cooking. 

To serve: Distribute in bowls, top with drizzle of coconut milk, basil if you wish, and croutons.
