Spicy Tofu, Rice and Wakame
I am very inspired by Asian cooking. This is a simple week night dinner that all will enjoy! Well as long as you like it spice.
Ingredient
Brown Rice
Japanese Wakame
Miso Paste
Block of Tofu
Hot Pepper past
Water
Agave
Green Onion
Sesame Seeds
Instructions
Cook for rice according to your rice insertions. The the wakame as many dried flakes and you would like add it into a pot of boiling water. Boil for 10 min. Boil some water in your kettle. Take a bowl add in the hot water with miso paste. Lastly add in the wakame. Take the tofu cut it into small rectangles, what ever thinness you want. I like to take a pan and and dry fry the tofu fist till both sides are lightly browned. Then I make the spicy sauce. I take a table spoon of the pepper past, a teaspoon of agave and as much water as you want to make a sauce to cover the tofu. Then add the sauce to the pan with the tofu in it. Bring to a light boil till all the sauce is thick. I then add the rice to a plate with the spicy tofu and a side of miso soup. Top tofu with some sesame seeds and cut up green onions. Vegan Gluten Free Prune Cake
This is a simple recipe for everyone that wants to enjoy something yummy and cake like! This was such a hit with vegans and non vegans. I just know everyone in your family will love it too! BTW you can sub prunes for apple sauce. You need one of these items for its pectin content.
Ingredients:
- 2 cups rice flour
- 1/4 cup tapioca starch
- 1/2 teaspoon xanthan gum
- 1 cup pitted prunes
- 1 cup water for the prunes
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup nut milk of your choice
- 1 tbsp apple cider vinegar
- 3 tbsp ground flax + 9 tbsp or about 1/2 cups water
- Low Sugar Strawberry Jam mine is homemade! (optional)
Steps:
- Preheat oven to 325 degrees.
- Grease bundt pan and set aside.
- In a small pan boil several cups of water. Remove from heat and 1 cup water to prunes. Let soak for 15- 20 minutes or until prunes have softened. Add prunes plus the water into a vitamix or blender. Set aside.
- Combine the flax with warm water. Set aside.
- Mix 1 cup nut milk with the apple cider vinegar also set aside.
- Combine rice flour, tapioca starch, xanthan gum, sugar, cinnamon, cloves, salt, and baking soda.
- In a bowl combine the flax and milk mixtures.
- Slowly add flour mixture to wet mixture and stir just until combined.
- Stir in prunes.
- Optional step add some strawberry jam to the bottom of the bundt pan.
- Next spread batter into bundt pan.
- Bake for 70-75 minutes. Check cake at one hour and bake additional time if needed or until cake starts to pull slightly away from the pan. This cake is very dense and moist so the toothpick test is hard to do on this one.
- Let cake cool in pan for 10 minutes than remove from pan to cool on wire rack.
- Also optional add some icing sugar mixed with lemon juice on top.

Episode 07, Canada Food Guide, Eating Clean Is Useless, Ont. Food Truck

Vegetable Scraps Broth
Ingredients
A full freezer bag of left over vegetable clippings that you would just toss away.
Things not to add would be starch items like potatoes of any kind. Everything else is welcome!
Skins, clippings, peals, the list can go on and on. If you are unsure of if you can add an item just message me.
1/2 tsp of what ever kinds of spices you wanna add.
So
paprika
salt
rosemary
turmeric
thyme
basil
anything else you want
Steps
Add the vegetable scraps and 8 cups of water to your pressure cooker* add the spices then add on your lid and let the pot come to pressure. Once it does turn it to low and let it simmer for about 25 min. Once its done you can release pressure or like I do just turn the heat off and let the pot come back down from pressure on its own. Once you can take the lid off add all the veg to a straner to try and get all the broth out. Let that cool. Once cool you can add to zip lock bags like I do or even add it to ice cube trays if you want little cubes of broth.
I love making my broth, saves me money, homemade, and is never the same twice since you may not have the same craps all the time. I hope you try this out yourself. If you do please let me know what you think.
* If you don't have a pressure cooker you are more then welcome to try it in a normal pot just keep in mind that it will take more time at least an hour to cook your veg.

Oil Free Fluffy Pancake

I am all about making vegan and oil free food when I can. This is the first one that I am so happy to tell, doesn't stick to the pan. I just love pancakes. I hope you enjoy them as much as I do!
Ingredients:
1 1/2 cups Whole wheat flour
3 tsp Baking Powder
Dash of salt
2 tbsp Flax Seeds
1 Mashed Ripe Banana
1 cup Nut Milk
1/2 cup Water
1 tbsp Lemon Juice
Steps
In a bowl add flax seed and 6 tbsp water. Let it set for 5 min.
Mix the flour, baking power and salt in an other bowl.
Back to the flax seed bowl add the banana, mixing in the nut milk, water and lemon juice, mix well.
Heat a nonstick griddle or pan. When its nice and hot ladle the pancake mix into the griddle. When bubbles form on the surface, flip them. Cook until lightly browned. Repeat until batter is used up.
Serves 6 very large pancakes. Just the way I like it.

Vegan Ricotta
I am soo happy with how this recipe turned out. I hope you enjoy it as much as I do!
Ingredients
1 clove garlic
1 (14 oz) package of extra firm tofu, drained
2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon black pepper
3 cups fresh basil
Steps
In a food processor, combine all ingredients. Pulse until everything is combined, but mixture still has some texture. Season to taste. Now time to enjoy on anything that needs some ricotta added like yummy pasta! Enjoy!
Ricotta can be made the day before and stored in the fridge.

BASIC COOKING FOR CACTUS PADDLES
Today I will be talking about basic cooking for cactus peddles. I find that they taste like green peppers pretty much. One thing I will say is be careful when cleaning the peddles I don't want you to prick yourself.
Ingredients
3 cactus peddles (mine came in a pack of 3)
water
a small spoon of oil if you wish
So the first step is to clean the peddles.
Take your paddle and place it flat on your cutting board. Then take your knife and cut away from you you want to take off the darker bumps where the thorns grow as well as the thorns, trying not to peel off all the outer dark green skin. Once you do that you will take a peeler peel around the hole outside of the peddle. You can see all of this in this top photo.
Cut the peddles up how ever you would like
Time To boil the peddles for 10 min till they become olive green like the next photo
Then Its time to fry with a little bit of oil or just some water till all the slime comes out of them, and they start to brown.
And here is how I had them. With my beef less tips, mashed potatoes, broccolini. You can also eat them in a tortilla! Just have fun with it. Have you ever had cactus paddles? And if so what did you do with them?

Tomato Soup
This soup is it's soo yummy and creamy/ buttery tasting with out there being either! No oil! So good for you!
Ingredients:
Soup
1 big tomato cut into rough cubes
4 pinches of salt
1 teaspoon dried oregano
1 teaspoon dried basil
1 (28-oz) can of fire roasted tomato
3 cups vegetable broth
1 cup canned coconut milk, plus extra for drizzling
1 tablespoon brown sugar
Croutons
2 Cups rye bread cubed
For the soup: In a large Pot, heat tomato cubs over medium- high heat. Add oregano and basil cook for a minute. Add canned tomatoes and veg broth, bring to a boil. Remove from heat, and puree with a blender or immersion blender. Return to heat add in the coconut milk and the brown sugar. Season to taste.
For the croutons: In a large skillet dry saute bread cubes for about 10 min. Season with salt and pepper while cooking.
To serve: Distribute in bowls, top with drizzle of coconut milk, basil if you wish, and croutons.

Steamed Whole Artichokes
Happy spring everyone! One of my favorite things about spring is artichokes. I get this question a lot, how do you cook artichokes so here we go!
Steps
Using a knife cut off the stems close to the base, also pull of the lower petals that are small and tough.
Place the artichokes in a steaming basket that is in a pot of water, the water should only come to the top of the basket.
Turn on the Stove.
Once the water has boiled turn the heat down to mid love and cook for 30-40 min (If you have a very large artichoke you may need to steam it longer.)
How to eat!
Pull off a leaf and scrape the "meat" off that is at the base of the leaf.
You may also take the leaf and dip it in vegan mayo or butter then scrape off the "meat"
Enjoy!

Sadie's Diner
The other week Chris and I went to Sadie's Diner for lunch. Chris had a burger in a wrap since they ran out of buns hehe, and I had a BLT. Both are vegan and made us soo happy that we have an other place around work that we can enjoy lunch. Find any fun food places that you really enjoy?
