Oil Free Fluffy Pancake

I am all about making vegan and oil free food when I can. This is the first one that I am so happy to tell, doesn't stick to the pan. I just love pancakes. I hope you enjoy them as much as I do!

Ingredients:

1 1/2 cups Whole wheat flour
3 tsp Baking Powder
Dash of salt
2 tbsp Flax Seeds
1 Mashed Ripe Banana
1 cup Nut Milk
1/2 cup Water
1 tbsp Lemon Juice

Steps 

In a bowl add flax seed and 6 tbsp water. Let it set for 5 min.
Mix the flour, baking power and salt in an other bowl.
Back to the flax seed bowl add the banana, mixing in the nut milk, water and lemon juice, mix well.
Heat a nonstick griddle or pan. When its nice and hot ladle the pancake mix into the griddle. When bubbles form on the surface, flip them. Cook until lightly browned. Repeat until batter is used up.

Serves 6 very large pancakes. Just the way I like it.

Raisins Rice Pudding




My pressure cooker has become my best friend! Significantly reduce the cooking time by using a pressure cooker. 

TBSP Vegan butter
1 Cup Brown Rice
1 1/2 Cups unsweetened almond milk
2 TBSP Maple syrup
1 TSP Vanilla extract
1 TSP Almond extract
1/4 TSP Cinnamon
1/2 Cup Raisins
1/2 Cup Nuts

In an uncovered pressure cooker heat the butter on medium. Add the rice and stir to cover. Add and stir in milk.
Cover and bring to pressure. Cook at high pressure for 17 minutes.
Remove cover and stir in the syrup, extracts, cinnamon, raisins and nuts if using) Serve warm or chilled.

Vegan Peanut Butter Fudge Bars



One of my favorite recipes that I have adapted from Chloe's Vegan Desserts. I hope you enjoy them as much as I do.

Ingredients:
For the peanut butter layer
1 cup peanut butter
1 cup coconut oil
1 tbsp vanilla extract
3 cups powdered sugar

For the chocolate layer
1/2 cup soy milk
1 1/2 cup chocolate chips
1 1/2 cup powdered sugar
2 tbsp coco powder
1/2 nuts for the top

Line a 8 inch square pan with foil.
To make the peanut butter layer whisk the peanut butter and oil over low heat until its all melted and well incorporated. Add the vanilla. Add everything into a bowl and use a mixer then add the powdered sugar. Mix until well combined. Then add the mixture into the pan.
Next for the chocolate layer. Cook the nondairy milk and chocolate chips until its melted and incorporated. Then add to a bowl and use a mixer to combined the powdered sugar and coco powder. Then add the chocolate on top of the peanut layer. Lastly add the nuts. refrigerate for 8 hours. Your done!

Vegan Avocado Pasta Salad

Ingredients
1 pound whole wheat fusilli
a pinch of coconut oil
3 tablespoons lemon juice
2 garlic cloves minced
1-2 teaspoons salt
2 cups cherry tomatoes halved
1 cup basil cut small
2 ripe avocados cu into small cubes
Black pepper

Steps
Bring a pot of water to a boil. Cook pasta according to package. Drain, rinse and return to the pot. Toss the noodles with just a small amount of oil to keep them from sticking.

Add all the other ingredients. Season with black pepper. Toss noodles, Drizzle with a little bit more oil as needed then season with salt and pepper.
Enjoy! You can serve this dish hot or cold. Wonderful for the summer.

Pickled Daikon Radish

I love Daikon so much! Pickling them is soo yummy, a fun little side dish or you can even add it to your sushi! My Fav!

Ingredients:
1 cup rice vinegar
1 cup water
1/4 cup white sugar
1/4 teaspoon turmeric
1 daikon radish, peeled and cut into matchsticks
1/4 salt

Directions:

In a small saucepan over medium heat add the vinegar, water, sugar and turmeric. Bring to a boil, stir to dissolve the sugar. Remove from heat.


Now Time for the daikon, once you have peeled and cut the radish. Place it in a colander with salt and mix. Place the colander over a bowl and let it drain for at least 1 hour. Rinse the salt off. Place the daikon in a glass jar. (I find you need two) Pour the brine through a colander. Refrigerate over night. This will keep for 4 months.

Potato Gnocchi

Last night I cooked from a cook book I got from x mas from my mom. Its Vegan cooking for carnivores. I have to say that I am really enjoying this cook book! I did know that this recipe was going to take longer then others but it was so worth it. I ended up making a butter sage sauce for the gnocchi which was soo wonderful. Have you ever made gnocchi? What do you think of it?

Basic Summer Dills Recipe

Thanks to my mother in law for giving me this recipe for making summer dills! These cucumbers I grew from a seed so I am so happy to have my first jar made.
Basically the brine consists of:
* 5 cups of water and 
* 2 level Tablespoons of pickling salt 
* 2 Tablespoons white vinegar

 Boil and cool. recipe can be halved, doubled :D
In a clean jar - place cucumbers, dill ( tops with seeds work best) and garlic. Cover the jar with a tea towel and poor in the brine. Leave in a sunny place (inside or out) for 3 days - then refrigerate. These will keep months ( or until you eat them all) :P

Yummy Pumpkin Pie Oatmeal

So this weekend I thought it would be fun if I spiced up the good old oatmeal. So I found a fun recipe from Kris Carr and added a little extra bananas! It smelled so good in my house! Whats not to love. Here is the recipe.

Coconut-Crusted Shrimp Dinner

Last night Chris and I made coconut shrimp, broiled lobster, vegetables and baked potato. Super yummy! Here is the coconut recipe. Super easy too! I think I should take more photos of my dinners I make! I always love to do new and different things to eat. What do you think?
